Mulberry Cashew Creme


Soak these two ingredients before hand for a couple of hours or overnight.

1 cup of mulberries in 1 cup of water.
2 ¼ cups of cashews in water




Into your blender place the following ingredients

1 cup of almond mylk
30 gms of chopped up, cleaned and soaked Irish Moss


Blend on full speed until Irish moss completely blended into mylk.  Scrape down the sides into the mix and then add the following.




Soaked mulberries plus the soak water
2 ½ cups of soaked cashews
¼ cup of Coconut Palm Sugar
1 teaspoon of Vanilla Powder


Blend thoroughly for 1 – 2 minutes using the tamper to constantly move the mixture around




• Pour into individual glasses and sit in the fridge to chill.

• Set the whole mix in fridge until it cools down and firms up then layer in serving glasses with fruit and top with a berry coulis sauce or the Rich Chocolate Goji sauce as in the photo.

Mulberry Cashew Creme surprises with its caramel like full flavour. I was expecting a sweet flavour when first creating the dish and was pleasantly surprised with the caramel overtones that popped out.
