Vegan Queso by Gwen Eager
Serves: 4-6
Use Organic:
1 cup cashews (soaked in water for 20 minutes then drained and rinsed)
½ cup orange bell pepper chopped
¼ cup olive oil
¼ cup nutritional yeast flakes
1 Tablespoon Flaxseed
½ cup unsweetened almond milk
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon paprika
½ teaspoon red miso paste
½ teaspoon sea salt
¼ teaspoon pepper
½ Tablespoon lemon juice
½ Tablespoon coconut aminos
Directions:
Place all ingredients into a blender or food processor and blend until smooth.
Option: Top with chopped tomatoes and/or jalapeños.
