SWEET POTATO COLLAGEN BROWNIES

Time: 1hr 15 min prep + 40 min bake time
1/2 cup almond flour
1 medium sweet potato (about 1 cup baked and skinned)
1/4 cup almond butter
2/3 cup coconut sugar
2 scoops Great Lakes Collagen
1/4 cup unsweetened cocoa powder
1 tsp baking soda
Dash of seasalt
Preheat oven to 350F.
Pierce holes in sweet potato and bake until you can easily stick a fork through (about 1 hour).
Alternatively, you can microwave or boil your sweet potato. Once it’s cooked, peel off the skin. PS. You can do this entire step in advance
In your food processor, add all ingredients and mix until fully combined.
Line an 8x8 baking dish with parchment paper.
Pour batter into dish and smooth out the top.
Bake 35-40 min or until a toothpick comes out clean.
Wait until they fully cool to remove from dish and slice.
Optional— sprinkle with a little bit of powered sugar
